First time doing include/exclude

Hi,

This is the first time I am creating include/exclude... so I was trying 
to create my own configurations... But I am not able to create something 
like that:
Exclude all filesystems in a unix machine
Exclude all directories in a windows machine
And so on, could someone give me some examples of differents 
include/exclude, at the admin guide it is not very clear...
