I like cnmaestro for these deployments because once you work out any provisioning issues you can hand over the keys to the project or offer a MSP contract to help with management or program changes they need.

 Have a look at the E700/E500 outdoor APs by Cambium networks.
I have done 2 large campus projects and now doing our first Campground. Easy to mesh and configure and performance hits the nail.
