Use a game camera. Put it in a lock box. You'll have to swap the memory card periodically, but it doesn't require a connection.

OTOH, you can also get a game cam with LTE.

Well, these things have some confusing details, the part about LTE and cell phone especially.  I have section of my yard where dumpers like to donate and I want to place a permanent camera. It's too far for a POE cable so I'm thinking a small solar panel, battery and a radio that can punch through 5-600ft of woods.  I don't think a 900Mhz radio would do that, but a 650Mhz radio might do it pretty well.  I've used plenty of 900Mhz ubiquiti radios and have tried similar situations, they failed. All I need is camera video and audio back to my NVR and monitor.  There are no trees within easy reach of the target location so a battery camera wouldn't do.
