The sweet corn is canned or flash frozen within hours from the field. It may be off the cob, but it’s probably fresher than any corn you’ve ever eaten unless you picked it yourself and immediately cooked it. But same day corn from the farmstand is so much better than several day old corn from the grocery store. And I have heard of people who throw the unshucked ears in their freezer to cook later like Chuck says. They must have a big freezer. Then shuck, butter, salt and eat. Cheap and better than what you will get from someone else. No boiling away the flavor. Tune the cook time so the kernels just lose their lighter sheen.
