There is a membrane between the shell and the white of the egg, the key seems to be whether that membrane is wet or dry. So whatever technique puts some moisture at that interface seems to make the eggs peel easily.
I’m not sure why fresh eggs are reportedly harder to peel, if anything you’d think eggs would dry out as they age. I seem to remember reading that commercial eggs have a sealant applied to the shell to seal the pores, that might make a difference if you are getting eggs from the farm or you have your own chickens. Not sure what Chuck’s salt and vinegar do to the sealant, probably the boiling water strips that anyway. My problem was shells sticking to the egg like they were glued on. I could crack them up in a glass or roll them or do anything but if the egg adhered to the shell, I was picking off little shards of shell and frequently ruining the egg in the process.
