No,  each pair is a balanced transmission line.  They actually convey RF and 
the twist of the pair cancels out radiation leaving the pair and entering other 
pairs.  The twist also prevents interference from the other pairs.  So 
separating them actually will make interference less and lower specs like NEXT 
(Near End Cross Talk).

If you strip back the insulation, shielding, drain wire etc. from a Cat5 cable 
a few inches, but keep the 4 twists in place up until the connector (like 
normal), but the 4 pairs are loose from each other, does that affect data flow?
