I've done that as well, if it's a somewhat secured location (people won't bump into it) just a 1900 box on the wall with a keystone faceplate and LC Keystone couplers. The LC Keystone couplers break very easy. I think I broke 2 of them trying to snap them into the faceplate. https://www.monoprice.com/product?p_id=2875
