I've used a telescoping fiberglass pole such as shown in this link.

I use the wheel stand <https://www.wonderpole.com/product/wheel-stand-pro24/> because I can just set that on the ground and stand on it, and then the pole is stable. If I was testing from a roof I would set up a tripod and just not bolt it down.

I've heard of using a drone, but you need a pretty beefy drone to lift up a CPE + antenna. I had a quote for one that was big enough, but it was several thousand dollars.

I've seen people using a telescoping mast on a trailer hitch. The local power company has a powered one mounted on a pickup truck. They put down some outriggers and shoot their pole up 70 feet or so. I don't know what that system costs, but I bet they don't give it away.
