The USAGE file says:
-d --directory DIR use DIR directory for building LFS; all files
jhalfs produces will be in the directory

Since I didn't set --directory, I expected the built files to be in /mnt/lfs

appear to do what is documented.
You're having what appears to be mixed output/usage from an older
version of jhalfs and what's currently in trunk. What does your svn info
say about the path you're using for jhalfs?
Help from the current jhalfs says this:
-D --directory DIR
use DIR directory for building LFS; all files jhalfs produces
will be in the directory DIR/jhalfs.
