If a 2.0.1 finds an 2.0.0, it removes this installation completely. No file is overwritten. All files, that were installed by a 2.0.0 are removed and then the 2.0.1 files are installed. There is no merging. If you want to change or add files, this should not happen in the OpenOffice installation directory. This should be done in user home directory or in another shared directory. Your templates seem to have the advantage, that they are not removed during 2.0.0 deinstallation, because they were not installed by 2.0.0 and therefore the Windows Installer does not know anything about them.
