No - with your package there won't be menu entries in recent versions of gnome
since it doesn't update the desktop-database. And you won't have integration in
the filemanager (mimetypes, what app can handle writer files, etc) - but that's
not critical for me since you wrote that Gnome is not officially supported.

Yes. I meant the symlinks. There are no desktop files in the menu-packages, only
links. The desktop-files themselves reside in the individual 
application-packages.

No - it doesn't. You're providing the files in the legacy location/in legacy
format, so KDE doesn't use the freedesktop-ones but the "old" ones, but again
this is not critical.

Not sure whether I got this right. You want to include a script in the package
that the admin has to lauch after modifying it? 
Well - I still like the idea of simply changing one single link much better than
