regarding 1)

Many programs offer a "update zip" command that means: replace old files by new
ones. This usually keeps the settings. If not, just try with the file 
compressed.

regarding 2)

You do not have to move the file. The instructions merely create a backup file.
You can edit the file directly, no need to move it around. I suggest to make a
backup-copy of the original (zipped) oot file and then play around with it (e.g.
unzip, modify, zip again)
You can try as well whether 7zip offers "on-the-fly" editing, e.g. edit it by
double-clicking in the file-view of 7zip (so that 7zip uncompresses the file "in
the background" and writes it back to the zip when the application used to editi
the file exits)

If that doesn't help, please look for assistance on IRC, the mailing lists or a
forum (you can ask in the 7zip-related support-channels as well)
