I've just found something interesting - if I untick 'merge adjacent line styles'
in the table properties of the bordered table, it looks fine in Adobe Reader 8.

Also, if I do larger borders, let's say 0.5pt (with the merge option enabled),
the borders don't look equal-widths in either FoxitReader 2 or Adobe Reader 8. 
If I then disable the merge borders option, the borders look better in both PDF
readers (though with a .5pt border, with merge option unticked, the corners of
the table don't meet properly when reading with Adobe Reader 8 - fine in
FoxitReader 2).
