You will find that: "tools" > "options" > "Language Settings" > "Languages" is more important, since it has the setting for the default language. The other place to set the language of the text is "Format" > "Character", where in the "Font" tab there is a pop-up menu for "Language". This current implementation allows you to have many languages in the same paragraph.
