Up to now our users have the imagination that the app window shows a part of a 'Desktop' which they can change in scrolling and zooming. This imagination is supported by the background being single-colored. When excanging with a static gradient, suddenly only the page and it's content moves, but the desk behind it stays still -> destroys user's expectations. If You really have to change the background, it has to scroll and zoom with the documents. For gradients this means potentially huge fields, e.g. SW document with 100ds of pages. Since today's displays only have 256 steps per color channel, the gradient would be obsolete anyways.
