It should keep its content but just undo the smart format. In other words, it should undo just the smart format not the actual editing. Because following your example, if I retype the content, Openoffice will again smart format it. So, if the smart format is not so smart or just does something in a particular case where you don't want it, there is no way to undo it except trying to go into menu's and somehow trying to undo or workaround the "smart" format.
