I have three jvm on my system and OOo always select the first one on the list. The problem (in my case) is not that OOo cannot overwrite the configuration file: the problem is that OOo overwrite it too much! I noticed that when I select a different jvm under Tools -> Options -> OpenOffice.org -> Java the file ~/.openoffice.org/3/user/configjavasettings_Linux_X86_64.xml is changed, but if I restart OOo the file is overwrite and the old setting restored!
