As mentioned, you can already do this. Whether you apply the language "none" or
call some other function "I want this word to only obey to the manually set
hyphenation points" has the same effect. I see no point in a dedicated function.
Assigning "none" now is very easy via the control in the statusbar, no need to
go to Format|Characer → Font or some other deep hierarchy.

And sure, you cannot add declinations/variants of words in the user dictionary
with one single entry. But you cannot do this anyway. If you use patterns, you
need to make sure that this pattern doesn't introduce regressions for other
words, and that surely is nothing the casual user can/would do.

If you want full control, you need to disable hyphenation. Either by the
language "none" or by the entry in the user-dictionary. In the user-dictionary,
you can not only disable hyphenation completely, but also set your own
hyphenation points by not adding the = at the end, but at the desired positions.
Adding "poly=phon" will only break poly-phon automatically.
