When creating a chart in Calc, you follow 4 steps:

1) Chart Type
2) Data Range
3) Date Series
4) Chart Element

In the chart element section, you can specify Title/Subtitle/Axis labels, choose
where the legend is and so on. However, if you create a chart without specifying
them (for example, if you forget to place your Y-axis label), there is no way to
add it once you've finalized your chart; you must recreate the chart from 
scratch.
