I'm running Fedora 11 on two different 64-bit smp machines, and on both the dialogs are almost unreadable. Other systems, also FC 11 but 32-bit, are just fine. I did install the 64-bit rpm from this site (and the 32-bits). The dialogs are still sort-of usable only because I remember where most stuff is and because mousing over the tabs changes the icon fragments and black-outs on them, sometimes making the text visible. The body of the dialogs is usually mostly black or yellow with many horizontal lines on top, arranged in neat columns. Oddly, none of the elements except the text labels are covered by the lines. The cover-up stops just before it gets down as far as the buttons at the bottom of the dialog. I looked through all of the Linux-related issues for the last 6 months, but saw nothing similar. Dialogs from all other non OOo applications are fine.
