I also encountered similar behavior on OS X 10.5 with OpenOffice.org 3.1.1
(OOO310m19 Build:2940)

Spreadsheet is somewhat complex so I can't easily isolate a test case.  It's a
file I had open for an extended session and after returning to it after a few
days I can no longer save.

I have some Dtrace (dtruss) output taken during the failure to save that I could
provide separately. 

My workaround was to select-all-copy each sheet to a new .ods document while the
original (un-saveable document) was still open and then manually resolve any
cross-sheet references that broke in the process.
