Steps to reproduce 1) Create a new document 2) In File/Properties add a new "standard property" 3) Add the property as field in the document 4) Attemt to change value or remove the property in whole. The value can't be change and the property can't be removed. 5) Remove the field from the document. 6) Attempt step 4 again. It works as expected. I might have some understanding for not being able to remove the property if bound by other object, but then an information-message is required. Not being able to change the properties value is simply wrong. You should not be required to remove the field, change the value and then add the field again.
