Edit: I found that Shift-Ctrl-End and Shift-Ctrl-Home have a behavior similar to
(but not exactly) like what is desired - Selecting all data in the spreadsheet
down and right from the current cell (Shift-Ctrl-End) or all data between the
current cell and A1, without going to AMJ65536.  

Perhaps, rather than changing the behavior of the Shift-Ctrl-Arrow in 2
dimensions, the behavior of these keys should be changed to stop at the first
empty column and row?  That, I think, would be more general than behavior #1 in
my initial proposal, but would change the performance of key combinations which
are useful as-is.  The current behavior of Shift-Ctrl-Arrow on sparse data is,
IMHO, not useful, and my proposal would not change the behavior for dense data.
