I could be way off here, but doesn't postfix by default add it's own default
domain to the From address if no domain is given?  If I send an e-mail
into my gateway with the SMTP 'mail from:' header set to only the
username part (e.g. mail from:<user>) it ends up in my mailbox as
being from [EMAIL PROTECTED] and I've seen some spam come in
(before I setup amavis, SA, etc) that way.

Well, the problem is, that it only happens now and then.. Most of the 
mails still come in just fine.. These servers handle tenthousands of 
mails per day.. They're up and running for months, but in the last 
weeks, i'm getting more and more reports of the sender address being 
rewritten..
