I simply look (glance) through the mailbox for ham. If ham is found (maybe three times a year) I read the X-Envelope-To: and To: headers and redirect it to those recipients. It is important of course to configure the system so it does not get scanned again on its way to the recipients. I also use $sa_quarantine_cutoff_level to keep the amount of spam in that mailbox to a reasonable level. This works well for me (a small company with a single admin).
