They're very close.  I'm always thinking of first following the gnome
hig and then follow tha mac UG if it's not opposite and if it is mak it
different for mac...

Basically, you can just follow the mac UG while keeping the following
rules in mind:

Capitalize all words in the element, with the following exceptions:

Articles: a, an, the.
Conjunctions: and, but, for, not, so, yet ...
Prepositions of three or fewer letters: at, for, by, in, to ...

excellent examples of this being used are shown in the section:
Capitalization of Interface Element Labels and Text

(example: notice how "Go To..." becomes "Go to Page" when "Page" is
added, "Save As..." becomes "Save as Draft" when "Draft" is added.
This shows how to and as become less important when another main item
is added to the action.)
