I was having the same problem. This is likely a memory leak caused by one of the applications you are running (which you could try to figure out using a variety of methods).
Simplest way to fix this is to "reboot" the computer (ie. G1). Easiest way to power-cycle the phone is to hold down the home, and power button together. After a few seconds, the screen will ask you if you want to power down the phone. Select yes. This will fix your sluggishness, but in order to eliminate it (which might be close to impossible if you wish to continue to run applications), you will need to discover what is causing the problem in the first case (which is a whole other discussion).
