There is no such thing as recording from AudioManager.STREAM_MUSIC. That constant pertains to playback.
You are recording with the encoding MediaRecorder.AudioEncoder.AMR_NB, which is described as "narrowband". Narrowband in this case probably means the quality is bad. Maybe try AMR_WB?
