Access is granted while installing. You may choose to go through the list of things accessed and stop installing. I don't think there is any other level of app specific access control available at present. Settings work in a global context. So, say once the GPS is enabled (through settings or other apps), any installed app could use it (if the app was granted permission to while installing).
