What Email protocol do you want to test? There are plenty of free email servers supporting the standard protocols POP3 and IMAP4. Gmail supports them both. But if you mean the proprietary Exchange Active Sync (EAS) protocol it's a different matter, but there are free servers for that too. Google is your friend.
