If you want to root your phone there are various aspects of Cupcake
that can be added (the most popular is the onscreen keyboard).  Many
are already stable - but I don't know how many are set up to flash
without a bit of compiling.  The JesusFreke ROM is the current
starting point.  Here's a pretty good tut.

This is not exactly a beginner's proposition, so I'm not recommending
it.  But that's pretty much the only way to get advanced features on
the G1.
