despite the fact that I understand the use case you pointed I do not
see a robust feature for templates and user dict paths. Andreas Schluens
can not confirm that changing theses paths always leads to a proper
working OOo.
We can offer more paths in the future (after OOo 2.0.3) if
1) we have valid use cases
2) we have a quality of OOo with respect to the paths that OOo works
fine even if the paths are pointing to invalid data.

Several paths are critical to OpenOffice.org. If a user is not
absolutely sure what she does in Options-Paths then OOo can refuse to
launch the next time. Therefore, all but 5 paths are removed from the
Options panel. The experienced user can still change the other paths by
editing the configuration file.
So next time I want different SO / OOo installations to share the same
"document templates" and "user dictionaries" paths I have to fiddle with
XML files, since the UI does not offer those two anymore. Hmm. Are
really all of the removed paths "critical to OpenOffice.org"? I don't
think so.

Does this mean there are chances to get some of the uncritical paths
back? :)
