http://apertium.projectjj.com/osx/nightly/ has nightly builds of all core tools for OS X, kept up to date by the same builder that everything else is. As with the other packages, apertium-all-dev.7z (or .tar.bz2) is everything in one big bundle.
The build prefix was /opt/osx which naturally will play havoc with the wrapper scrips, but the binaries themselves get their library search paths adjusted so they can run from any folder. Because they use the PCRE patch, you can download any of the Debian language pair builds and just use those. 7-Zip can extract everything for you, and you just have to move things in the right place, or use full paths. The builds are done via the master branch of the https://github.com/tpoechtrager/osxcross environment and packages from MacPorts, but with libxml++ and dependencies built from source to link them against libc++ instead of libstdc++. -- Tino Didriksen
