possible to drill down to the policy level depiction?
Yes, it's possible to drill down to the detailed-policy-level depiction of
compliant & violated devices using following path.

Dashboard View of Complaint or Violated Devices ---}  Detailed List view of
Complaint or Violated Devices ---} Detailed Resource View of a Complaint or
Violated Device with currently effective policy information.

How about enabling to search figures bound to time (e.g. Total Enrolments)
within a custom time period?
Essentially, even if we compare other products like Airwatch, what they
have provided are static views as I described.
But your suggestion is indeed nice to have as an extended approach.

Regarding the 'Devices without Latest App Version - Showing (Device Count +
App + Platform) separation", can we give a picture of all the app versions
(up to date or not) of a given device?
Yes, this is possible by having a look at the "Installed Apps" section of
Device View.
