Ted, thanks for the followup info. This is a major upgrade, to the point of considering it to be a migration onto a new product. As such, I would expect it to take several months to complete. While there isn't a great depth of experience out there yet (impossible with such a new version), there is a growing breadth of it. So don't be surprised (or alarmed) if your consultants are doing their first or second install, as for every thing there is a first time.
One thing to think about is that customizations to previous versions of ITSM meant code changes, and many of those can now be done via data-driven configuration variables in ITSM 7. So keep that in mind when you are determining which customizations to migrate. I might even suggest that you use it out of the box (except for data customizations) for a few months before deciding on any code-level changes.
