I have used the ChangeField action to change a label (I do it on my View Calendar form to set the day values). I also have another place where one organization calls a field one thing and a second organization calls it something else (exact same menu values just different labels, Company politics can be so much fun at times).
The only gotcha I know of is do NOT set the label to nothing (a space is ok). Seting the label to nothing will move the field on the form.
