Susan, I feel you pain in most of your issues. I might be able to help you out on one.

CTRL + Click will select multiple fields one at a time. SHIFT + Click and drag will work. The key for this is to make sure that you see the crosshair mouse icon. If that is up you can click and drag. It will add the fields selected to the selection you already have.
