Dear all,

Thanks for your contribution in the discussion about black rice. Before I read
the article on black rice of Assam, I was not aware of its existence in our
part of the world. But now I know that amongst the health conscious public this
product is widely used. Now I am also convinced that black rice black and it
does not turn white when you cook.

'The proof of the pudding is in the eating'. Last Saturday I went out to buy
black rice in Rotterdam. The best place to buy this type of product in
Rotterdam is the Green Passage.

" We all wish we could be a little more environmentally friendly, and know
where to buy those "safe" food items for our families. Well here at De Groene
Passage, literally the Green Passage in English, you can buy your meat from an
organically accredited butcher, your fruit and vegetables from Gimsel natural
foods supermarket, and even take a break at the Bio-cafe. The passage covers
some 21,527 sq. ft. and offers shopping pleasure in a natural plant-covered
environment that exudes peace and harmony. Shoppers come from near and far to
enjoy this unique way of caring for their family's well-being".

I could choose Thai black rice or Italian black rice. The Italian variety was
Venere Nero rice also known as Black Venus rice. I bought a packet of Thai
black rice. It is expansive. I paid €3,25 for a packet of 400 gram rice.

Returning home I followed the instructions printed on the packet. I washed one
cup of rice three times and left it soak for about 40 minutes in two cups of
water. Then I cooked it under low heat for 40 minutes stirring regularly. It
was ready when the water evaporated.

Black rice has a deep black colour (see attached images) and usually turns deep
purple when cooked. Like brown rice the black rice has a mild, nutty taste. You
have to chew the rice harder and longer than your normal white rice. It is also
suitable for making porridge, dessert, traditional Chinese black rice cake,
bread, and noodles.

Dear Binoy, Utpal, Anna Satin, Nripen. Himendra, Sanjoy,

Until this week I did not know that black rice existed. I came across the
article and shared it. I am happy that it generated some discussions. Thanks to
you all I have acquired some new knowledge.

1. I understand that Kola Joha is black rice. In Assam it is in the market
as Kola Joha.
Check http://www.giskaa.com/kola-joha-wild-black-joha-rice-500-g

2. Aromatic Rices.
This is a 300 pages long publication by IRRI and gives information about
Aromatic rice in different parts of the world. Black rice of Assam is also

Dear Himendra Thakur:
I do not think Kola Joha will be the same as Black Rice; it is not black
enough, as far as I know. I am copying the expert, Dr. Goswami, who retired
from CSIR-NEIST recently. He may respond, assuming he looks up e-mails once in
a while.
Regards
Binoy
