We have many 7940s and 7960s in use with standard 802.3af gear using
custom cables that reverse on two pairs.  There are instructions on how
to make them here:

Cisco 7970 supports 802.3af and has full support under asterisk for both
SIP and Skinny with chan_sccp. The 7940's are solid phones but they do
not support 802.3af so you need to use Cisco's PoE gear.

Also make sure to get a service contract for each of the type of phone
you buy, so you can get firmware updates.
