AsteriskNow use CentOS 5 and it comes preinstalled with dahdi and asterisk with the freepbx GUI interface and it seems to be missing all the dev packages

Do you imply you previously installed a Dahdi binary package ?
If positive, before compiling Dahdi source code, you need to install Linux header files.
On Debian systems, you can get this with something like :
apt-get -install linux-headers-2.6.26-2-686
