Just disable (via the .conf file) and remove most of the apache modules -- its very small then. Small enough to go on a LEAF/LRP to drive the control interface, anyway.
There are a lot of modules that only make sense on a "full" web serving sitution (like mod_speling for example) but if you get rid of them things get really light, apache-wise.
