My understand, admittedly limited, is that the windowing system (X or other) generates a lot of interupts. This can burden the system that is also engaged in real-time tasks such as rpt for voip. That said, my Asterisk server is is an AMD2500+ with 512 MB ram. I did install the Gnome desktop with Fedora Core 1, but I don't do anything else on the server. It runs headless.
