Yes, you use the EAGI interface after you get Sphinx installed. You then have to train it around a 'dictionary' file, which should be kept quite short (ie, 10-100 words) for the best accuracy.

The documentation is very sparse, I agree. You can start by using Sphinx from the command line with recorded soundfiles, to make sure it's working.
