You can record from an extension on your system using the Record dialplan command. Check out http://www.voip-info.org/tiki-index.php?page=Asterisk+cmd+Record for more info. If you have a decent phone, it sounds great. We recorded with a great quality mic at first, and ended up finding out that our Polycom phones made better recording equipment for Asterisk than our pro mic did.
