One solution may be to force all email to be sent to the exchange server from the asterisk server. If you are using sendmail, the option is DSexchanger_server (replacing exchange_server with the hostname or IP address), this option is called a relay host. Otherwise you can configure sendmail to send email for a specific domain to a specific server. This may be necessary if you cannot easily adjust the MX records as others have recommended. A lot depends on what part(s) of the network services you have direct control over.
