Sangoma cards for your ananlogue line, it's a very good idea to go with
echo cancellation hardware.

If you want a clean asterisk distro with freepbx and other components,
you can check out PBX in a flash (iso downloads for asterisk 1.4, 1.6. I
recommend the 1.4 for now) http://pbxinaflash.net/ 

A dell server is ideal, the key is to ensure that it is compatible with
redhat enterprise (Pbx in a flash is based on Centos 5.x, which is
redhat enterprise) and the hardware card you plan to go with.

If they don't want to replace their existing handsets, you can check out
citel's tva at http://www.citel.com/Products/Portico.asp this device
allows you to keep your handsets and allow them to talk to a IP pbx
(such as asterisk). You will need to verify if the handset will work
with citel's tva. I don't have first hand experience working with
Citel's tva, perhaps others can share their experiences etc.

If you wish to migrate to ip based phones, I would recommend the
polycom's, excellent sound quality, good reliable phones, newer 3.x
series firmware allow you to program web based services, various
customizations, macro's etc.
