The Sipura Profile Compiler can generate the default XML for you. The SPC tool is included with the newest firmware, which you can get from here http://www.cisco.com/en/US/prod/voicesw/ps6790/gatecont/ps10024/ps10026/SPA2102_Firmware.zip Here's the command line to generate the sample XML file: spa2102-5-2-10-spc-win32-i386.exe --sample-xml sample.xml
