If you are looking to use your own custom build, you need to create your
own rpm's. Then you can build a yum repository on your own (web, ftp,
nfs) server.

You could also build a local MIRROR of the asterisk or ubuntu
repository. You just need to download the files from the site.

Easy example...
Copy the contents of
http://packages.asterisk.org/$arch/$releasever/current/$basearch/ to
your own server.
Change your yum.repo file to use the local files.
baseurl=http://local_server/local_file_path/
Example :
yum install asterisk (this asterisk should be come from local server &
not from asterisk server)
