in your rc.conf:

# set asterisk's timezone with:
TIMEZONE=Europe/Copenhagen

#and additionally, set the UNIX's timezone with:
TZ_TIMEZONE=UTC2

Figuring DST for your area of the world is left to the reader.

Hint: For me in the central US timezone I use:
TZ_TIMEZONE=CST6CDT,M4.1.0/2,M10.5.0/2
