Thanks, Michael. This seems to have been the issue. Disabling echotraining is chan_dahdi.conf has stopped the panic on DAHDI calls. Presumably the DAHDI changelog indicates that this should not be a problem with the 0.7 release, if DAHDI has been bumped beyond 2.2.0.1.
